LEMON BLUEBERRY LOAF


LEMON BLUEBERRY loaf!  

This recipe works for any time of the year but especially for spring. Loaf is very soft and sappy! And  the smell...incredible!!  


SERVINGS: 10-12
TOTAL TIME: 1 hour 30 minutes



INGREDIENTS FOR LOAF

  • 200g butter
  • 150g icing sugar
  • zest of 3 lemons
  • 4 eggs
  • 2 tbsp milk
  • 220g flour
  • 3tsp baking powder
  • pinch of salt
  • 125g blueberries


INGREDIENTS FOR GLAZE & DECORATION(optional)

  • 100g icing sugar
  • 3 tbsp lemon juice
  • few blueberries
  • mint leaves

INSTRUCTIONS

  1. Preheat the oven to 180C/350F and put a baking paper into the mold (26x10 cm or similar, for bread)
  2. Mix together the butter and icing sugar, then add and mix in the zest of the lemons
  3. Add the eggs and milk and whisk until smooth then also add flour and whisk until combined
  4. Toss the blueberries in a little flour to prevent them from sinking to the bottom, then put in mixture
  5. Pour the mixture into the mold (casserole, tin..) and bake for 1 hour, or until a toothpick inserted into the center comes out clean
  6. When it cools fully, add the lemon juice to the icing sugar until you get a flowing consistency and pour on the cake in a zigzag strokes
  7.  If u want put some blueberries and mint leaves for decoration and enjoy!
